“Healthified” Biscuits

I’m such a sucker for homemade, melt in your mouth, fluffy, buttermilk biscuits.  Along with the cornbread, my Nanaw’s biscuits were among the first things i made.  Of course, my Nanaw’s biscuits were and still are anything but healthy.

Nanaw’s Famous Biscuits:

  • 1/3 cup lard
  • 1 cup flour
  • 3/4 cup water or buttermilk

There are soooo…. good, and I still have one when she makes them, but nutrition wise, they just don’t make the grade.  So, as I am always coming up with healthier versions of different foods, I came up with an amazing whole-wheat biscuit recipe! 

What Ya Need:

  • 1 cup whole-wheat flour
  • 1/4 cup white flour
  • 1/2 cup oats
  • 2 1/2 tsp. baking powder
  • 4/4 tsp. baking soda
  • 5 Tbsp. butter, cut into chunks (I use Brummel & Brown)
How Ya Make it:
Preheat oven to 425F.  Combine all ingredients in a bowl with a fork.  Cut in butter with a pastry blender or two forks until mixture resembles coarse crumbs.  Add milk and stir lightly until dough forms.  Place on a floured surface and knead.  Press dough with hands into a rectangle 1/2″ thick, and cut into 2″ rounds.  Place on a baking sheet.  Bake for about 12 minutes or until golden brown on top.  I love serving mine with dark honey or jelly!
