Oatmeal Pancakes
I have to have oats of some form during any day, no exceptions! Before I was totally into a healthy lifestyle, instead of craving oats, I craved pancakes. No way on God’s green earth was I going to give up the classic flap jack. After several good and bad batches of them, I finally created the perfect recipe so I could enjoy both pancakes and oats at the same time.
What Ya Need:
- 1/2 cup quick oats
- 1/3 cup egg whites
- 1/2 tsp. vanilla
- 2 Tbsp. whole-wheat flour
- Lots of cinnamon
- 2 tbsp. skim milk
- 2 tbsp. whole-wheat flour
How Ya Make It:
In a small bowl, mix together oats, egg whites, vanilla extract, flour, cinnamon, flour, and milk . Add additive now also!
Preheat skillet, spray with non-stick cooking spray, and pour batter in while making a tradition “pancake” shape with a spoon. You may need to spray spoon with spray also!)
Pay close attention while cooking. These tend to burn very easily. They are ready to flip when they turn crispy on the edges, or when they turn a dark brown color.
These are pretty dull when eating just plain, so I always pep them up by adding pumpkin, mashed banana, diced apple, or peanut butter & jelly! As for the topping, you can use syrup, peanut butter and jelly, almond butter, pumpkin puree, or my personal favorite, mashed banana and syrup. Mmmmm…..
